Winter Beet Salad

This isn’t just a salad. It’s a ceremony. Roasted or steamed beets meet tender greens, juicy citrus, creamy cheese (if desired), and a bold, balancing vinaigrette. Every bite feeds your body and spirit with color, depth, and flow.

Beets are known in Ayurveda to purify the blood, strengthen the liver, and nourish reproductive tissues. In Latin traditions, they’re often served at times of family gathering and emotional healing—making this dish both nourishing and sacred.

Ayurvedic Soul Notes

  • Beets are sweet, earthy, slightly bitter—excellent for building rakta dhatu (blood tissue) and pacifying Vata while supporting Pitta liver health.

  • Citrus brightens and balances—bringing flow, flavor, and digestive fire.

  • Greens (arugula, spinach, or baby kale) balance sweetness with bitterness—ideal for winter cleansing.

  • Goat cheese or avocado adds creaminess and softness to ground the entire dish.

  • Walnuts or pumpkin seeds bring ojas, texture, and protein for sustained energy.

Winter Beet Salad


Ingredients

For the Salad:

  • 3–4 medium beets (red, golden, or a mix), roasted or steamed and sliced

  • 3–4 cups tender winter greens (arugula, baby kale, spinach, or a mix)

  • 1 orange or blood orange, peeled and sliced into rounds or segments

  • ¼ cup crumbled goat cheese or ½ avocado, cubed

  • ¼ cup toasted walnuts or pumpkin seeds

  • Optional: pomegranate seeds or fresh mint

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp fresh orange or lemon juice

  • 1 tsp apple cider vinegar

  • 1 tsp maple syrup or raw honey

  • ½ tsp Dijon mustard

  • Pinch of sea salt + black pepper

  • Optional: pinch of ground cumin or grated fresh ginger for warmth


Instructions

1. Prepare the beets:
Roast whole beets wrapped in foil at 400°F for 45–60 minutes until tender, or steam peeled chunks for 20–25 minutes. Let cool slightly, then peel and slice or cube.

2. Toast your walnuts:
In a dry pan, toast walnuts for 3–4 minutes until aromatic and golden. Set aside.

3. Make the dressing:
Whisk olive oil, citrus juice, vinegar, maple/honey, mustard, salt, and optional warming spice until smooth.

4. Assemble with love:
In a wide bowl or platter, layer greens, beets, and citrus slices. Add cheese or avocado, then sprinkle with walnuts and pomegranate seeds. Drizzle with dressing and toss gently or serve deconstructed.

Dosha Tips

  • Vata: Serve beets warm, add avocado or cheese, and use extra olive oil.

  • Pitta: Use golden beets, go easy on mustard, and focus on cooling citrus.

  • Kapha: Use arugula for bitter sharpness, lighten cheese/avocado, and add cumin or ginger to dressing.

Serve With:

  • A warm grain bowl (quinoa, millet, or basmati)

  • Steamed lentils with ghee

  • A soul-soothing soup like roasted carrot-ginger or mung dal
