Ingredients (makes 8–10 crostini)

  • 1 cup green peas (fresh or thawed frozen)

  • ½ cup goat cheese (soft, room temp)

  • Zest of ½ lemon + 1 tsp lemon juice

  • 1–2 tbsp fresh mint or basil, finely chopped

  • Sea salt and freshly cracked black pepper, to taste

  • 1 small baguette or gluten-free loaf, sliced

  • Olive oil, for brushing


Optional flair:

  • Drizzle of raw honey or balsamic glaze

  • Sprinkle of red pepper flakes or edible flowers

Instructions

1. Toast your crostini:
Brush baguette slices with olive oil and toast at 375°F for 8–10 minutes until golden and crisp.

2. Make the pea mash:
Blend or smash peas with lemon juice, herbs, a pinch of salt, and pepper. Keep it rustic or make it smooth—up to your vibe. Taste and adjust brightness.

3. Assemble with grace:
Spread each crostini with a layer of goat cheese. Top with a spoonful of pea mash. Finish with lemon zest, extra herbs, and optional drizzles or sparkle toppings.

4. Serve fresh:
These are best served slightly warm or room temp, with a sip of mint tea, sparkling water, or herbal white wine.
